The latest addition to the performance-driven Rocket Espresso Giotto line, the Premium Plus retains many of the commercial components and functionality that made its predecessor a favorite with espresso enthusiasts. Among them, the chrome-plated brass E61 brew group and 1.8 liter nickel-plated copper boiler are the highlights which make this prosumer machine so well-adept at assuring temperature stability.

The upgrades to the Giotto Premium Plus have been made with a meticulous focus on precision. A newly integrated, commercially rated Sirai Pressure Stat offers enhanced accuracy and durability. Rocket Espresso’s Thermosyphon System has also been modified; the diameter of the copper tubes, which supply water to the brew group, has been widened to allow for greater water flow. In addition, the Premium Plus comes equipped with an indication warning system that alerts users when the water reservoir needs to be refilled.

The design of the flagship Giotto Premium Plus retains the modern aesthetics of the original model with a few improvements, tailored to the needs of its customers. Stainless steel legs, with anti-slip feet have been added for easy cleanup. The Premium Plus also has a full, round pressure gauge display for increased visibility. With its time-tested design and modern upgrades, the Giotto Premium Plus offers users the ability to easily brew professional-quality beverages at home.

E61 Brew Group

The E61 brew group is about one thing and one thing only: heat. Proper heat, heat retention, heat stability … it’s got it all covered through its labyrinth of channels through which hot water flows, keeping everything at a consistent temperature. Its proximity to the boiler allows it to absorb radiant heat from the boiler, and the high quality metal materials hold heat well. Finally, its size as well as its material – 9 lbs, and chrome plated brass, respectively – means that it stays at a consistent temperature for long periods of time.

Thermosyphon System

The Thermosyphon System has a superior layout for optimum extraction. Unique to the Giotto Premium Plus, the system allows for 20% greater water-volume capacity than its peers.

Brewing on the Lever-Operated Brew Group

The E61 brew group is lever operated. Choose either the single or double shot portafilter, and measure out the correct amount of grounds using the included measuring scoop. Tamp the grounds down with the included tamper, and insert the portafilter into the group head. Lift the lever to start the pump and begin dispensing coffee, and once you have your desired amount, pull the lever all the way down until coffee dispensing stops and your hear the pump stop. Pulling the lever all the way down releases pressure from the brew group – you will probably see a small amount of water released into the drip tray from the brew group.

Heavy-Duty Boiler

The copper boiler is the heart of this machine, providing heat for brewing, steaming, and hot water. Nickel plated, it uses a heat exchanger system and a lead-free brass endplate for increased heat retention – Rocket Espresso is one of the few (or only) companies to use such an endplate. It holds 1.8 liters of water, so you don’t have to worry about running dry, and employs an electronic sensor to monitor the water level internally.

Cup Warmer

The copper boiler also heats the cup warmer located on top of the machine. This hot air is released through holes in the top of the machine, ensuring that your cups are heated. Brewing espresso into a cold cup causes it to lose temperature rapidly; we recommend pre-heating cups on the cup warmer or by rinsing them with hot water before brewing.

Pressure Gauge

No longer a half-moon gauge, the Giotto Premium Plus has a full, round display that allows users to easily monitor machine pressure.

Heat-Up Time

The Rocket Giotto Premium Plus takes about 8 minutes to reach proper brewing pressure, and another 5 to 7 minutes for the brew group to heat fully – altogether, about a 15 minute wait. While you can technically brew once the machine is at brewing pressure, wait until the brew group is fully heated before preparing your first shot. Only then will you pull a properly heated and extracted shot.

Stainless Steel Steam Wand

The steam wand is located to the left of the E61 brew group, and employs temperature-safe anti-burn stainless steel for its construction. The knob to begin and cease steaming is located above the wand – once the machine is at brewing temperature, turn the knob to the left to release steam, and close the knob to end steaming by turning it to the right. Below the steam wand is the steam pressure gauge – the machine is at steaming pressure when the gauge measures around 1 bar. Use the steam knob to foam and steam milk, soy milk, or half and half for a cappuccino, latte, café breve, or latte macchiato. Be sure to wipe down the steam wand with a damp cloth after you’ve finished to prevent any buildup.

Stainless Steel Hot Water Nozzle

The hot water nozzle is located to the right of the brew group. Made of no-burn stainless steel, you can open the knob located above the nozzle to begin dispensing hot water for tea, a café americano, or hot cider. Below the hot water nozzle is an embossed plate with the machine’s name, “Giotto.”

Water Reservoir

The 100 oz water reservoir is removable for easy cleaning and refilling. Remove the cup tray from the top of the machine, and remove the water reservoir using the handles. Rinse with non-abrasive detergent, and refill at the tap. A water softener can be used to increase the length of time between descaling cycles.

Regular Upkeep

Use a damp cloth to keep your brew group head free of excess grounds, and use a brush to clean the shower screen and group gasket on your brew group. The portafilter’s metal filter basket and filter handle can be cleaned in warm water and non-abrasive detergent to remove excess grounds and coffee oils. When the drip tray fills, empty it and clean the drip tray and stainless steel drip tray grid with a damp cloth. The stainless steel body of the machine can also be wiped down with a damp cloth to keep it looking its best.


Included with the Rocket Espresso Giotto are a single shot filter holder, double shot filter holder, single shot filter basket, double shot filter basket, tamper, measuring spoon, and detailed instruction manual.
